Covid's Culinary Companion

There are a lot of foodies in the Rappleye/Crompton extended family, members of which suddenly with the time and space to sink their teeth into fun recipes (or at least this bystander has!).

John and Amy have us covered sunup and sundown
Start with a Mimosa and flapjack breakfast, with a bag o' sow (bacon) from Dunkin!
 

dinner time they provide the Piece d' resistance, steak tips from the fatted cow!
No wasting away during THIS pandemic. Animals beware!


Tulsa uses family recipe, Trudy approves!

white bean soup recommended by Kelly Rapp. That is a very good recipe. Shared w my vegan neighbor, he was impressed. So was Trudy.





Improvised spinach/mushroom pasta. After undercooking the pasta a bit, reserve 2cups (if doing a pound; I do half) of pasta water, add pasta, raw spinach, sautéed onion & garlic, sautéed mushrooms, a little butter. Add tons of Parmesan. Delish.

Meatless Wienies on Earth Day

I had a growler half full of Brown Ale, and needed to whip up a dinner entree to accompany Amy's splendid potato salad. So I emptied the suds into our largest sauce pan. Decided to go on-line before screwing things up. found this recipe: onions sugar, salt, pepper, water and ale of course, sautéed and simmered according to plan. Heated up some baked beans, and voila! a meatless picnic that left no one wanting.

Sticking with the Frugal Gourmet & digging in the freezer, found three hot links. That was all it took. Soaked the red beans the night before, sautéed onion, garlic, jalapeño, green bell pepper, added dried spices.  Stir into already simmering beans. Add sliced hot links in the end. Serve over white rice. This is the Southern style. Real yummy. Woke up thinking about them!

Has everyone forgotten about the can of tuna? I was determined not to go to the market. I reached for my can of tuna. I had elbow macaroni (why?), onions, celery, thyme; butter, milk, flour for the roux with some cheddar cheese, and frozen peas, sprinkled with cracker crumbs on top. Turned out great & I can reheat for dinner while I teach my class online tonight. Easy peasy & comfort food.

Oxtail slow cooked for three hours w chunks of veg- potatoes, carrots, celery, leeks- served with pickles, mustard & sourdough 

This was a whole roast chicken!! But all I got was bens beautifully prepared cut before we devoured it (Roast chicken spread with butter, mustard, & salt)

We'll refer to this beefy sandwich as "Lucky Lucretia"

"This week we were told to not go to the market or such things at all. So into the freezer I went. Found a hamburger patty. Fried it up with onions & jalapeño topped with some scraps of cheese I salvaged when making a half batch of garlic grits. Steamed a zucchini with lemon & olive oil. Mmmm. One of my best meals yet."

April 3... while you were sleeping

Tulsa porks out in Echo Park, while up the coast, Peter and Robyn harvest their plentiful tomato crop with a vegetarian dish fit for the Roman emperor.

First, the fruit of Tulsa's labor on Lucretia Ave, a locale she now refers to as "Carnivore Corner." In her own words:
Pork chop smothered in capers’ lemon sauce and rosemary roasted potatoes with salad.

"Robyn makes eggplant Parmesan in a unusual way. We dredge the egg plant in flour, then egg, then Panko breadcrumbs, and then fry it, broil the cheese on top, but we only add the tomato sauce at table. That way the eggplant stays nice and crispy. Last year’s tomato crop was monumental ,So we have about 50 jars of homemade canned tomatoes to draw on for the sauce."

Monumental indeed...

Fact vs Rumor
It is rumored that Ti was spotted eating out of his compost bin by a backyard neighbor in recent days, a signaling to most residents in Grand Traverse County that the apocalypse had arrived. FOR THE RECORD, the compost had not, technically, been transferred to the official bin.
Here's the skinny... Stepdaughter Cora Kinney had chucked a perfectly ripe and lovely avocado peel into to Stage I kitchen compost bin, with gobs of lovely lime-green "Butter" inside. I discovered her faux pas before chucking the newly acquired scraps into the backyard Compost Cannon. I quickly swished a few digits into the shell, salvaging an ounce or two of that viscous gold into my gullet BEFORE tossing the remains to the worms and the microbes. Neighbors might still be aghast, but rest assured readers, the sequencing was relatively pristine. Next Topic Please!

"Kale omelet. Homemade kidney beans. Molasses, chili powder, S&P. 
Slow cooked after overnight soak"

and then for dinner, the piece de resistance:

"Ginger pork meatballs w/ baby bok Choy and pickled radishes"

"I had some canned tomatoes that I needed to use, so I defrosted two hot Italian sausages to add to my sautéed onion, garlic, red pepper & a jalapeño! Add tomatoes & small sauce w fresh basil & other italian spices. Cook about an hour. Sprinkle w Parmesan over pasta. Mmmm."

The Buzzer Beater: West Coaster Peter Crompton gets in at Midnight ET with this elegant plate:


"Here’s our dinner from tonight. Life is rough when all you have to think about is cooking your next meal And have a daughter who fulfills all your shopping whims.

This is green beans cooked with a little soy sauce Hot peppers, garlic and ginger and potatoes sautéed in sesame oil with garlic, Accompanied by a ahi tuna steak rubbed in ginger, and all topped off with a sauce made of cilantro, chicken stock, brown sugar, lime, fish sauce, And yes, garlic and ginger!

It’s a good thing we’re home alone because after this meal our breath would stun an ox at 20 paces.

Shopping tip: We don’t have Zekes Creek to get good fish at, but we’ve discovered that Costco has amazing fresh tuna steaks."

Hi All,
Here’s my homemade chicken soup I made yesterday. Made the stock Saturday with chicken and the trio: onion, carrot, celery with herbs and spices. Turned out pretty good! 

Threw in some sauteed trio agin with some zucchini and made some matzo balls. Pretty damned good. 

ALSO... here is the much sought after recipe for cabbage soup. ---->>>>>>>


There is a rumor that Pardon Tucker is poised to turn this text into a hot dish. Stay tuned!!!

Kelly and Ben chime in from across the pond...

First is crispy seabass with roasted potatoes (Brit style)- sauce is lime, cilantro, garlic, bit of vinegar, & lemon- w radishes and spring onions :). Looks fancy but very easy/ simple ingredients.


Next up- big hunk of Shepherd's pie- good to bake in your biggest pan & have a hearty lunch helping for the week. Diced carrots, celery, onion for the bottom, then a layer of ground meat (you can use beef, lamb, turkey- or veggie substitute), & topped with peeled/ boiled potatoes mashed & mixed w/ cream (we do coconut milk or oat creme), bake for 20 min & feast. It's still very cold in London so it's nice to have a warm delicious mush.

Here's a quick roundup from Rhode Island to Michigan. Leading off is Anika down at the Crompton R.I. ranch at Pardon Tucker. Since her Kurt Russell imitation escaping from New York, she's had plenty of time on her hands, and crushed it!

"Homemade bolognese, long and slow to calm the nerves the first day I arrived. Did the trick."



"I made this banana bread with no butter and no sugar. As good as the real thing."


"It tasted better than it looks!! Classic beef chili made with happy Oreo cows homegrown on the Island. Chez says 'yum.'"

Meanwhile, 900 miles west in Northern Michigan, Amy MacKay went deep into her library to whip up the following.

All right campers, the gauntlet has been thrown down. Stoke your fires and uncork the spices. We await your culinary contributions with bated breath.

For those scoring at home, Annie had 3 stills worth two points apiece (6), and Amy had a three-point video. Time to get in the game!

    1. Don't quit Tulsa! Keep in mind, Billy Rap is not only working in tandem with Christy, BUT they are driving up the stock price in BLUE APRON. I'm in committee trying to figure out how many points to deduct.

  4. I am relieved to see I'm not the only meat-eater on this blog! At least we all take note. As I told Timmy, I do eat meatless dishes...gonna dig into my split pea soup for lunch now.
